Apricot Bliss Balls

Nutritious bliss balls made from dried apricots, roasted cashew nuts, coconut cream, desiccated coconut, honey and lemon zest. The perfect snack to satisfy any sweet cravings.

Bliss balls are one of the easiest and most satisfying snacks to make. They are blitzed up in only a few minutes then simply rolled into balls before being placed in the fridge. These Apricot Bliss Balls are a bit of a twist on the classic, made from dried apricots instead of dates.

INGREDIENT NOTES:

  • Cashews: These are the base of the bliss balls and what holds everything together. You could use different nuts if you prefer.
  • Dried apricots: I always have a bag of dried apricots in the pantry. They're perfect for adding to toasted muesli, magic slice, muesli slice, or if you're after a delicious sweet treat - try my apricot rocky road!
  • Honey: I love these bottles of runny honey, they're so easy to use and reduce the drippy mess.

STEP BY STEP INSTRUCTIONS:

Add apricots, coconut, cashew nuts and lemon zest to a food processor. Blitz everything together until finely ground.

Add the lemon juice, honey and coconut cream then blitz again until the mixture starts to bind together.

Roll mixture into balls 20g each. Then roll each one in desiccated coconut.

Store in an airtight container in the fridge for up to 2 weeks.

Are bliss balls healthy?

Yes! Bliss balls are full of excellent protein and nutrients. They are a great snack to have when you're craving something sweet, but don't want to resort to bikkies or chocolate.

Could I add other flavours in?

For sure! The best thing about bliss balls is how versatile they are. You could add in any of your favourite dried fruit including dates, prunes, cranberries, raisins, sultanas etc. Also any of your favourite type of nuts and seeds including pumpkin, sunflower, flax and chia seeds.

STORAGE:

Store bliss balls in an airtight container in the fridge for up to two weeks. Bliss balls can also be frozen! Store in an airtight container in the freezer for up to three months.

TOP TIPS:

Bliss balls are so versatile. The nuts, seeds and dried fruit can generally be swapped out for another variety in equal portions. For example, 100g of cashews could be swapped for 100g of almonds or even a half and half split.
